Quick hack to stretch your soups


Soups rule the kitchen for they are quick and easy to prepare. Even better to the wallet, it is so simple to stretch soups by adding cheap ingredients like beans. Canned beans are ideal if you can get them on a sale but if that is no available, there is absolutely nothing wrong with dried beans. Just soak them overnight in a couple of inches of cold unsalted water before cooking. They are cooked when the beans no longer absorb water and are no longer opaque when sliced in half. If you do not have overnight, boil the beans for three minutes in a pot, cover, then allow to soak for an hour. They will be ready for soups, meatloaf, chili, and casseroles.
